Our flour is milled to order just for you. We use our amazing wheat berries and our stone mill to make amazing fresh whole wheat flour. Our flour is unbleached, un-bromated, non-irritated with no additives. Flour is typically a blend of red and white wheat as well as hard and soft wheat that ranges in protein from 8-13% and usually only utilizes the endosperm of the wheat kernel.
Our soft white wheat berries have a protein of 11% which creates one of the best multi-purpose or all-purpose flours. Our hard white wheat berries have a protein content of 13% which produces an amazing bread flour. Our white wheat flour is unbleached and is free if of potassium bromate.
