Vanilla plants take about three years to mature and produce beans. About 6kg of green vanilla beans is needed to produce 1kg of black beans. Madagascar produces close to 85% of vanilla in the world. Madagascar vanilla mainly grows in the SAVA region (Sambava, Antalaha, Vohemar, Andapa), located in the North East part of the island, representing an integral part of the population income.
The humid climate of the SAVA region gives an ideal accommodation for vanilla plants. Average annual temperatures in the region are between 18°C and 30°C. The average rainfall is abundant throughout the year and reaches peaks in February-March. The best vanilla pod will have a length of at least 15 cm (6 inches), with no split, no scars, or dryness.
